Вперше за тисячі років: кольорове зерно злаків як функціональна їжа майбутнього

Статтю присвячено новому для України напряму селекції пшениці й голозерного ячменю з кольоровим зерном для підвищення харчової цінності цих культур. Чорний, синій і фіолетовий колір зерна злаків зумовлюють антоціаніни і фітомеланіни з групи рослинних флавоноїдів, а жовтий колір ендосперму — каротиноїди з групи тетратерпеноїдів. Ці пігменти мають високу антиоксидантну активність і можуть забезпечити харчову профілактику таких тяжких захворювань, як серцево-судинні патології, цукровий діабет, деякі форми раку тощо. Створені авторами статті унікальні сорти чорнозерної пшениці та голозерного ячменю з кольоровим зерном внесено до Державного реєстру і наразі впроваджуються в промислове виробництво.
