FRAGMENTATION OF SUCROSE MOLECULES UPON INTERACTION WITH ELECTRONS

Abstract

The processes of sucrose molecule fragmentation during pair collisions with electrons were studied by mass spectrometry method. The mass spectrum of singly charged ions at an electron energy of 70 eV and a sucrose vapor temperature of 360 K consists of 12 groups of lines. For the first time, the threshold values — the ionization potential and the appearance energy of fragment ions — were experimentally measured during the interaction of electrons with sucrose molecules. The main pathways of sucrose molecule fragmentation leading to the formation of monovalent ions were experimentally studied and analyzed. The energies of formation of fragment ions upon dissociation of the excited parent ion of a sucrose molecule were estimated, and their dependence on the masses of fragment ions was analyzed. All data obtained for the sucrose molecule are compared with similar data for the related molecules fructose and glucose.
